I need help finding such kind of music. What I mean by "epic," I mean songs that usually have an orchestra backing up a man/woman (prefer a woman's voice) singing in a foreign/Latin voice.

I've always been quite fond of the epicness of Beethoven's 9th Symphony (http://youtube.com/watch?v=k81Lt-qAv7A) in D minor (http://youtube.com/watch?v=GWSqNTSN9iU).
Also a shoutout for one of Uematsu's best compositions, Aria di (http://youtube.com/watch?v=7NC45S948ss) Mezzo Caraterre (http://youtube.com/watch?v=qJi6Hyu7-zo).
And fuck the haters, One Winged Angel in orchestra (http://youtube.com/watch?v=TlkKBL_aYgY) was brilliant, though I prefer the Black Mages' rendition (http://youtube.com/watch?v=B_MW65XxS7s).

I second RT's "One Winged Angel" suggestion.
Duel the Fates from the Star Wars prequels soundtrack. Best thing that came out of those movies.
Spider Man 2's trailer theme, if you can find it.
I don't know about latin, but the Halo 3 "Finish the Fight" trailer theme/last song on the OST was amazingly inspiring.

Not quite what you're thinking of, but Albuquerque (http://www.albinoblacksheep.com/flash/albuquerque) is pretty epic. (Not for dial-up. Also, video is pretty shitty, but it does the job)
Well, it IS an epic story of fun.
There's always Liberi Fatali (http://www.youtube.com/watch?v=eD5eEgWVxVY&feature=related) from the Final Fantasy VIII soundtrack.

Wow thanks a lot guys, these are the kinda songs I'm looking for...I'm shocked though i forgot O Fortuna...i loved Excalibur...and I would love Libera Me if it wasn't for the rap...but its still kick ass opera...more of these would help me though. Again, thanks a lot. :D
