We'll start with my favorite anime tv series.
Fullmetal Alchemist. I don't think I need to explain this one again.
Trinity Blood. It's dark, has an interesting plot, interesting characters, and superb production values. Not to be missed . . . if you don't mind the bloodshed, that is.
Ghost in the Shell: Stand Alone Complex. Really strong writing makes this an intelligent cop show, and let's not forget the Tachikomas!
And now for my favorite anime movies.
Castle in the Sky. It's magical. What else can I say?
Kiki's Delivery Service. It's so cute, I can't help but love this feature. In fact, if you don't like Kiki's Delivery Service, then you have no soul. It's as simple as that.
Steamboy. This is quite possibly, the best animated action-adventure movie in the history of ever. I couldn't stop watching for a second.
Cowboy Bebob. (I know; I've only seen the movie! :( I wanna see the series so badly!) This movie is too cool for words. And it's got a great soundtrack. Need I say more?
Ghost in the Shell: Solid State Society. Sure, it's really just a 100-minute episode of GITS:SAC, but it's a good episode! Trust me when I say that.
I hope to find more good anime stuff in the near future. Oh, by the way, although it's not one of my favorite anime programs, I do believe Naruto is slightly above-average. *runs full tilt in the opposite direction as fast as he can*
What? Nobody's mentioned Witch Hunter Robin yet?

Meh, might as well. There's definitely more I should mention, but I can't really think of anything else.
Cowboy Bebop (duh)
Princess Mononoke (probably one of my favorite movies, too)
The Melancholy of Haruhi Suzumiya (Just awesome, really)
Darker Than Black (no ending yet, but it's still very much on the interesting side)
And, for some reason, I'd like to give S-cry-ED an honorable mention. I think it was mostly Kazuma, but I just found the series awesome.

Well, ok, that's a lie. LATELY, I've been trying to change my policy from always poking holes in things like this to not doing it anymore, but this just caught my eye...
Intelligent writing? The only thing intelligent about it is the vocabulary. I mean, yeah, they use a lot of big words and reference literature a lot, but at the end of the day it's still got the same "lucky ass in the right place at the right time" deus ex machina for Mr. Not-a-super-cop (the guy with the revolver) as every other detective show, and the Major is Mary Sue incarnate.
Once you cut past the shallow attempts to appear intelligent it's really no better for your brain meats than a Dick Tracy comic, or one of the Harvey Boys/Nancy Drew novels.
It's like "Oh look, The Major knows exactly what she needs to know to solve the case, and then does hacking on a level that no one but The Laughing Man (the GITS universe's best hacker, for the uninitiated) can hope to come close to, while doing super acrobatics and fighting off ten other super trained combatants because she's THAT FUCKING GOOD... and in the mean time Mr. Revolver happens to walk into a situation that makes the whole thing obvious for no reason at all, except that he had to in order for Section 9 to break the case."

Trigun (In the words of TvTropes "I've never seen somebody kick so much arse in my entire life", it's one of two series I own the box set for)
Cowboy Bebop (Never get sick of watching it)
FLCL (the other series I got the whole boxset for)
As far as pulp shonen goes, put me down for subbed One Piece.

Ok, two I forgot to mention because I'm apparently amnesiac:
Cowboy Bebop: because this is one of the few ahniimays with a dub I can stomach; I realize that the japanese dub is relatively just as bad, but I can't tell, because I can't speak japanese :p
Vision of Escaflowne: Because steampunk mecha is just that awesome
And now from this list I am reminded that FLCL isn't on my "Completed" list. Which is should be by now. I'm off!

Nerima Daikon Brothers-The songs in this anime are very catchy, especially the money girls song.
FLCL-Random as shit and I loved it ofr that.
Afro Samurai-The fight scenes are just plain awesome.
Giant Robo OVA-Retro goodness and cinematic quality animation.
Naruto-Me=Narutard
Avatar: the Last Airbender-Technically not an anime. Just a really, really good anime-inspired cartoon.

One thing about these threads I notice every time they are made: there's certainly evidence that television and cable are doing their part for the media.
I am not sure if I meant this in the "lololololololollearn2watchothershows" way or the "Neat, companies licensing series and popular television are doing their part to share it with more and more people."

1.) Monster
2.) Welcome to the NHK!
3.) Gunslinger Girl
4.) School Rumble!
5.) Bleach (well, until a certain part, and then, once again after that part, but in between... not so much.)
6.) Air TV
7.) Well, if FMA wasn't on here someone would kill me...
and... well, you know, I like too many of them, but I'll stop here before I just start listing all of them.
Easier to list my favorite for this season.

I don't watch much anime (i.e. nothing someone else doesn't force me to watch/lends me the DVDs) so I have a small list.
1. Fullmetal Alchemist - Har har, Surprise! (although, I just learned how to write it in Japanese and holy crap, I hate those kanji in it. At least compared to just getting to write "FMA")
2. Trigun - Because Vash is awesome. (And he has the best facial expressions in the manga)
3. Cowboy Bebop - It's just too cool not to like.
Runners up, due to nostalgia:
Sailor Moon - I grew up with this.
Magic Knight Rayearth - Cheesy, but it has some great moments.

I really don't watch too much anime any more, surprisingly, but I do have some old favorites from yesteryear.
1) Cowboy Bebop: Because it's awesome. Most awesome.
2) Trigun: Sheez, am I just repeating the same list that half the posters here have?
3) Paranoia Agent: Creepy and fun. The opening sequence rocked.
4) Samurai Champloo: A very fun series. I FINALLY got to see the last episodes-- They were on sale at Suncoast. :sweatdrop
5) Bobobo Bo Bo-bobo. Or however you spell it: Not my favorite, but I do love a bit of randomness every now and then, and Bobobo fits the bill nicely.
When I was younger, I watched Inuyasha (back when Inuyasha was more about hunting demons and collecting jewel shards than sorting out pathetic love triangles and searching for ways to defeat Naraku only to find out that he has an Anti-Defeat-Naraku shield that's gonna take another two seasons to knock down.), Yu Yu Hakusho (I vaguely remember watching this), and One Piece (What was I thinking?!). I like to think my taste in anime has improved somewhat since then.

One show I feel that never gets enough attention, notice, etc, and it really should is Ergo Proxy.
Ergo Proxy is one of the sexiest, coolest animes I have ever run across.
Sadly it's like Trigun, only 20someish episodes.
It's a very mental show. Very weird show. Very cool.

I'm not much of an anime watcher, but I enjoyed Spirited Away, Princess Monoke, and Ranma 1/2. Ranma 1/2 doesn't have lofty dialogue or teach any great lessons in morality, but it amuses me to watch Ranma transform from a stubborn teenage boy into a busty teenage girl every time he is splashed with cold water. :D

Gad Guard
An amazing character drama disguised as a mech action show. It has no true hero or villain, it is not good vs evil, it is simply people living in a world and doing what they need to do to get by, wheather their decisions or morally right or morally wrong. Fantastic show.

My all time favorite anime would have to be
Lupin the 3rd...hands down...I'm surprised that no one else mentioned it...
Kenshin is also a favorite of mine
I also like Full Metal Alchemist though I haven't finished watching it all yet
Samurai Champloo is also good
Just about anything by Miayzaki is sweet as hell.
I also enjoy Bleach
